White Gem Parsnip is a popular variety of parsnip (scientific name: Pastinaca sativa) known for its smooth, white roots that are shorter and more uniform than traditional parsnips. These roots typically grow to about 20–25 cm in length and have a sweet, nutty flavour, especially after a frost, which helps convert their starches into sugars. They are a great addition to soups, stews, and roasts.
When to plant
Sow directly outdoors from early spring (March to May) when the soil temperature reaches around 8–10°C.
Parsnips are slow to germinate, usually taking 2–4 weeks.
Site and soil
Choose a sunny spot with well-drained, light, and deep soil.
Avoid stony or compacted soil, as it can cause the roots to fork.
If your soil is heavy, consider using raised beds.
Sowing
Sow seeds 1.5 cm deep in rows 30 cm apart.
Space seeds 2–3 cm apart and thin out seedlings to 10 cm apart once they are about 5 cm tall.
Watering and care
Keep the soil consistently moist but not waterlogged.
Mulch around the plants to retain moisture and prevent weeds.
Harvest
Ready to harvest 120–150 days after sowing — typically from autumn through winter (September to February).
Frost improves their flavour, so leaving them in the ground until after the first frost is recommended.
Pests and problems
Watch out for carrot fly — cover plants with fine mesh if this is an issue.
Ensure proper spacing to prevent fungal diseases.
